† Health † Quick, healthy lunch idea

Hey all! 

Should this blog become more of a "thing", I'm considering making a whole series of this kind of post. We shall see!

This is a lunch idea that combines several very important aspects when trying to eat healthily, especially if you're a student (like me):

  • It's cheap
  • It's quick to make
  • It's easy to make
  • It's nutritious and low in carbs

So, without further ado, here it is!

-Two eggs (not three, despite the photo)
-A small portion of smoked salmon
-Green beans
-Mixed seeds
-Almond milk

  1. Start by putting your green beans and your spinach in a steamer. If you don't have a steamer, a simple alternative is boil them in a pan of water (if you do that, put it on low heat). Steam (/boil) for 20 minutes

  2. Whilst your greens are doing their thannng, crack the two eggs into a bowl and add a splash of almond milk. Whisk it up for a few seconds, then put the mixture into a frying pan. 
  3. Scramble your eggs until they have reached the desired consistency, and then shred the smoked salmon into the eggs. 
  4. Then put your scrambled eggs on a plate with the greens, and top the lot with the mixed seeds. Serve hot, and enjoy!

My finished product looked something like this: 

I personally chose a mixture of seeds that I bought from Tescos. They're advertised as being a "salad boost", but honestly they're great on any savoury dish. Additionally, they add an extra punch of nutrition to any meal! See below for a look at the seed tub:
